Zucchini Slice

Wondering how to convince your lifelong learner to eat their vegetables? We have a healthy and fun recipe to get them excited for greenery in their snacks!

Zucchini slice is an Aussie favourite, often enjoyed as a light lunch or snack. The best part is it’s super easy to prepare and your body will thank you for the healthy fuel. 

Serves: 10

Preparation time: 45 - 60 minutes

Cooking time: 30 - 40 minutes

Ingredients:

  • One medium onion, chopped

  • ½ cup frozen peas

  • 500g zucchini, washed

  • ⅔ cup reduced fat cheese, grated

  • ½ cup corn kernels, frozen

  • 6 large eggs, beaten

  • 125g lean ham, chopped

Method:

  1. Grate the unpeeled zucchinis

  2. Combine all ingredients and pour into a greased, oven proof dish

  3. Bake in a moderate oven (180 degrees celsius) for 30-40 minutes

  4. Serve with wholemeal bread and margarine.
