Autumn Menu – Spiced Lamb Kofta, flat bread, Tzatziki and Salad

Winter is almost upon us, but we thought we would squeeze in one more of our Autumn menu highlights for our families.   

Working closely with Centre Cook Hollie Jones from Aussie Kindies Torquay, we are excited to provide a nutritious meal that could be lunch or dinner for the whole family to enjoy! 

Spiced Lamb Kofta with Flat Bread, White Bean Tzatziki and Greek Salad 

Serves: 4 

Lamb Koftas

Preparation time: 10 Minutes 

Ingredients  Measurement 
Lamb Mince

Bicarb Soda

Corn flour

Mint

Coriander

Coriander Powder

Cumin Powder

Paprika Powder

Vegeta stock

Egg

Breadcrumbs

Garlic – Crushed

Red Onion Diced

500g

1 Tsp

¼ Cup

Method: 

  • Combine all ingredients and mix well. 
  • Roll into Kofta shape. 
  • To Cook: 
    • Fan Bake on 180 degrees for (15 Minutes or until golden brown) 
    • Fry in pan with a Tbsp of oil, turning on each side, until golden brown.

Flat Bread

Preparation time: 5 Minutes Plus Resting time of 30 minutes 

Ingredients  Measurement 
Plain Greek Yoghurt

Self-Raising Flour

Salt

1 Cup

1 Cup

1 Tbsp

Method: 

  • Combine all ingredients and mix well. 
  • Knead for 5 minutes and allow to rest for half an hour. 
  • Cut into equal pieces and roll flat. 
  • To Cook:
    • Fry in cooking oil sprayed pan until golden brown on each side. 

White bean Tzatziki: 

Preparation time: 5 Minutes 

Ingredients  Measurement 
Plain Greek Yoghurt

Mint

Grated Cucumber (Squeezed Dry)

White Beans

Lemon Juice

Paprika

Salt and Pepper

1 Cup

½ Cup

To Taste

Method: 

  • Add all ingredients to a blender and process until smooth. 

Tip: Continue to add more Yoghurt if consistency is too thick. 

Greek Salad

Preparation time: 5 Minutes 

Ingredients  Measurement 
Lebanese Cucumbers – Chopped

Roma Tomatoes – Chopped

Red Onion

Lemon Juice

Salt and Pepper

Method: 

  • Combine all ingredients and refrigerate until ready to serve.
